Proper Brick Oven & Tap Room to open before Labor Day

994148 369330493188845 1008113021 nProper Brick Oven & Tap Room at 139 Seventh St., Downtown, will open before Labor Day, confirms owner Suzanne Hrach. The restaurant will hang its sign today on a brick exterior that has been entirely repointed. 

Proper will offer 30 draft beers -- with an emphasis on local breweries -- and 25 wines by the glass, with some available via a temperature-controlled enomatic system.

The menu at the 99-seat eatery will showcase pizza with seasonal toppings made in a wood-burning oven. The renovated interior will be "modern, casual and relaxed," said Ms. Hrach.

She has hired Lynette "Elbee" Bushey as executive chef, former chef at Verde Kitchen & Cantina in Garfield.  The bar manager will be Drue Ann Trombetta formerly of Siba Cucina in Seven Fields, sibling to the newly-opened Bohem Bistro next door.

The restaurant's build-out is nearly complete, with furniture and kitchen appliances arriving next week.
