Gaucho to expand, obtain a liquor license

gauchoGaucho Parilla Argentina in the Strip District is in the early stages of expanding to the building next door, confirmed manager Anthony Falcon. 

The popular restaurant will expand its dining room to include more countertop seating as well as tables and chairs in the front room. The plan also includes a lounge in the back of the building, once the restaurant secures its liquor license. 

Mr. Falcon said the closing on the building next door will be in the next few weeks. The build-out, designed by Desmone & Associates Architects, will take four months or so.  It will also include an expanded kitchen, where currently, chef Curt Diedrich, cooks over a wood-burning grill. 

By the time the expansion is complete, the kitchen will include a gas-powered oven. It will make cooking infinitely easier.

"I highly doubt we'll ever run out of empanadas," he said.
