Butcher on Butler to open next month

kielbasa1Michael Rado, consulting chef at Tartine, the breakfast and lunch spot that opened in the West End in June, plans to open Butcher on Butler at 5143 Butler St. in Lawrenceville next month. 

The chef, who had moved back to Pittsburgh four years ago, spent time working for Joel Robuchon in Las Vegas and for Daniel Boulud in New York. 

Mr. Rado will take over the neighborhood butcher shop that had been Foster's Meats, run by Bruce Foster until his death in 2012.

Mr. Rado will use several of Mr. Foster's recipes, particularly one for kielbasa. "It's already good and the neighborhood likes it," he said. "I don't need to improve on it."
