Gaby et Jules Patisseries et Macaron and other Paris 66 news

gabyetjulesI just called and spoke to Fred Rongier, proprietor of Paris 66 in East Liberty, about when the restaurant's sibling, Gaby et Jules Patisseries et Macarons, will open at 5837 Forbes Ave. Squirrel Hill. July 18 is the opening date, he said.

About the patisserie, according to the Facebook page: A new specialty, high end bakery —the joint vision of Fred Rongier and David Piquard.

The name, Gaby et Jules, recognizes Fred's grandfather, Gabriel, and Piquard's grandfather, Jules. Although both men never met, they shared a dream of someday opening a bakery. Their grandsons are excited to make that dream come to fruition!

Piquard creates the signature sweet confections at Paris 66 and brings with him experience from Fauchon and Ladurée, two of the biggest names in French pâtisserie.

Mr. Rongier also delivered other news. Paris 66 has a new chef, Franck Lacaille, who arrived from the South of France a week ago. A new menu will debut July 10. The restaurant, which opened in 2009, transitioned from a creperie to a full-scale bistro last year

Perhaps its time to revisit Paris 66 as well as whet an appetite for macarons.
